Of course, today you can buy beautiful baskets with custard or butter cream in any pastry shop. But believe me, cooked at home according to this recipe, they will be much more tender, tastier and better than in the store. Not a single dye and preservative, always fresh, and at minimal cost.

Sand baskets with protein cream will melt in your mouth. And it depends only on you what berries you decorate them with. And if you don’t like Kurd or jams, you can always add chocolate or cocoa.

Protein cream or Italian meringue, very easy and quick to prepare. You can cook it while the sand baskets are in the oven.

How many cakes will come out? Depends on what forms you will be using.

For sand dough

  • 300 g flour;
  • 0.5 tsp salt;
  • 150 g of spread or butter;
  • 150 g of sugar;
  • 0.5 tsp baking powder;
  • 4 egg yolks;
  • 2 tbsp sour cream.

For interlayer

Any thick sweet and sour jam or berries with sugar

For Italian meringue (protein cream)

  • 100 g of protein + a bag of vanilla sugar;
  • 250 g sugar + 70 g water;
  • 1/3 tsp lemons.

Cooking bowls with protein cream

Add the baking powder and salt to the sifted flour, rub the margarine and grind everything into crumbs. Break eggs with sugar. It is not necessary to beat the mass, the dough will not become fluffier.

Mix eggs and flour, add a of sour cream.

The dough should become a solid ball. If you do not wash it for a long time, add a little more sour cream. When the dough becomes homogeneous, cover it with cling film and refrigerate.

Shortbread dough does not like warm hands and prolonged kneading. From this, it begins to crumble and spread in the hands. When baked, it will be very fragile, therefore, it is necessary to fill sand baskets with protein cream very carefully.

After an hour, take out the dough and roll it into balls. The ball should be small. Make one to test, then roll it out and press it along the bottom and sides of the mold. It is best to choose silicone molds for custard baskets – then it is easier to remove the shortcrust pastry. From metal, this is much more difficult to do.

The second way to roll out shortbread dough for baskets is to roll it out as a whole, and then cut circles with molds and then lay them in a mold.

I stick to the first way. Because in the second there are scraps. And shortbread dough does not like unnecessary actions.

Very important! the walls of the baskets before baking should not be more than 3 mm. Put beans or large peas on the bottom of each basket before baking. Then the basket will rise only on the sides and retain its shape.

This time I decided to use lentils. The result – a small bean just grew into the dough, and I had to pick it out from the inside. Therefore, take large beans.

Bake for about 15 minutes, put in a preheated oven. The baking time depends on your oven.

After the baskets have cooled, fill them with stuffing.

Filling for baskets with protein cream

We will start with grape jam and protein cream. It is also called Italian meringue. It is prepared very simply and quickly. Sugar is brewed into caramel with water.

It is best to have a thermometer, because the boiling point of the syrup should be 120C. But if there is no thermometer, then you can check it like this: take a drop of syrup on a spoon and see if the syrup thread stretches or it drips. The syrup should be very viscous.

As soon as the syrup begins to boil, start whipping the proteins in a tight foam. This is called until hard peaks, but to be clearer; very clear patterns should remain from the mixer.

Once the white is whipped, pour the hot caramel in a thin stream and beat until it cools.

We fill the baskets

Put sour jam on the bottom. In my case, it was grape. But this is completely unimportant. You can put any fruit on the bottom, and it will turn out very tasty.

Sprinkle cream on top of the jam. This is done with a pastry bag. What do they do if they don’t have it? Take any tight plastic bag, make a hole in the corner and pour the cream.

Even if your cream does not lie beautifully, and you don’t have special nozzles for jigging meringue, it’s not scary.

Baskets with protein cream and fruit are obtained as usual. No preservatives – only natural products. You can absolutely please your children with a dessert from your childhood. Believe me, your loved ones will appreciate them.
