Ingredients:

  • 1 medium head of green cabbage
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • ¼ cup grated Parmesan cheese (or nutritional yeast for a vegan version)
  • 1-2 tbsp chili oil or chili crisp (to taste)
  • ¼ cup chopped walnuts or sliced almonds (toasted)
  • Salt and freshly cracked black pepper, to taste

Instructions:

  1. Preheat & Prep: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Slice the Cabbage: Cut the cabbage into thick slices (about ¾-inch or 2 cm thick) from top to core. Keeping a bit of the core helps hold the steaks together.
  3. Season: Whisk the olive oil, minced garlic, salt, and black pepper in a small bowl. Brush both sides of each cabbage steak generously with the garlic oil mixture.
  4. Roast: Arrange the steaks in a single layer on the baking sheet. Roast for 20 minutes until the edges are deeply golden and crispy.
  5. The Topping Magic: Remove from the oven, flip carefully if desired, and sprinkle the grated Parmesan evenly over the tops. Return to the oven for another 5 minutes until the cheese is melted and bubbly.
  6. Serve: Drizzle with the trendy chili crisp oil and top with toasted walnuts for that perfect crunch. Serve immediately while hot!
