On Napoleon cake layers we prepare two doughs
1 dough: 4-5 cups flour, 1.5 cup water, 1 tsp vinegar, 2 eggs.
2 dough 400 grams of margarine, 1 glass of flour.
Knead the first dough immediately. It will be very cool. It is advisable to take cold water, and the colder the better.
The second dough is prepared from margarine, which we grate. To do this, take frozen margarine. We crush with our hands into one tight lump.
Next, roll out the first dough and put the second in the middle of it. We turn it into a square.
Roll out the resulting lump, fold again and put in the refrigerator for 30 minutes.
This procedure is repeated several times. The more you roll out the dough and fold it again, the more layers there will be in the Napoleon cakes.
We bake cakes in a hot oven. Rolled out should be as thin as possible.
The dough is not the most elastic and very dense. But your efforts will be justified, because these are the most delicious classic Napoleon cake layers that we have made.
Cream on cake Napoleon classic
The cream in this recipe also consists of two parts.
1 part: butter whipped with sugar (250 g of butter + 1 glass of sugar)
Part 2: 2 eggs, 1 cup sugar, 1 tbsp flour, 1 liter milk. Cook like custard.
Mix both masses when cool.
This is the classic Napoleon from my grandmother’s notebook. There was no Internet then, and recipes were passed from hand to hand. They are all verified. Napoleon turns out great and very tasty.
