Cream-Filled Easter Bread (Ukrainian Paska with Melt-In Center)

🧾 Ingredients

For the dough:

  • 500 g all-purpose flour (approx. 4 cups)
  • 250 ml warm milk (1 cup)
  • 100 g unsalted butter, melted
  • 100 g sugar (½ cup)
  • 3 eggs
  • 25 g fresh yeast (or 7 g dry yeast)
  • 1 tsp vanilla sugar or ½ tsp vanilla extract
  • Pinch of salt

For the cream filling:

  • 200 ml heavy cream (at least 33% fat)
  • 100 g white chocolate (chopped)
  • 2 egg yolks
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • Vanilla extract or vanilla sugar to taste

👩‍🍳 How to Make Cream-Filled Paska – Step by Step

1. Make the yeast starter

Warm the milk (not hot), add yeast and 1 tbsp sugar. Stir in 2 tbsp flour and let sit for 15–20 minutes until foamy.

2. Prepare the dough

In a large bowl, beat eggs with remaining sugar. Add melted butter, vanilla, salt, and the yeast mixture. Gradually stir in the sifted flour.

Knead until soft and elastic. Cover and let rise in a warm place for 1–1.5 hours.

3. Make the cream filling

In a saucepan, whisk together yolks, sugar, and cornstarch. Add cream and cook over low heat, stirring constantly, until thickened.

Remove from heat, stir in chopped white chocolate and vanilla. Mix until smooth. Chill completely.

4. Shape the buns

Divide the dough into portions based on your baking molds. Roll each portion into a circle. Spoon some filling into the center, fold the edges over, and shape into a sealed ball.

Place seam-side down into molds.

5. Second rise

Cover with a towel and let rise for 30–40 minutes.

6. Bake

Preheat oven to 180°C (350°F).

Bake for 25–30 minutes. Cover with foil if the tops brown too quickly.

7. Decorate

Cool completely, then drizzle with glaze, melted chocolate, or dust with powdered sugar.
