Ingredients needed to make classic cottage cheese syrniki

Syrniki are more than just a dish — they are a symbol of a cozy morning. Despite their simple ingredients, they can be tricky to make: sometimes they fall apart in the pan, other times they turn out too dense. This recipe helps you find the perfect balance, where the natural flavor of cottage cheese takes center stage and flour simply helps hold the shape.

To achieve the ideal texture, prepare the following ingredients:

  • cottage cheese — 500 g (best with 5–9% fat);
  • egg — 1 large;
  • sugar — 2–3 tbsp (to taste);
  • flour — 3–4 tbsp (for the batter) + extra for coating;
  • salt — a pinch;
  • vegetable oil — for frying.

How to make classic syrniki step by step

Follow these instructions to ensure your syrniki hold together and have a soft, delicate texture.

Step 1: Prepare the cottage cheese mixture

Rub the cottage cheese through a sieve or mash it very thoroughly with a fork until smooth and free of large lumps. Add the egg, sugar, and a pinch of salt. Mix well until fully combined.

Attention! Using a blender may release excess whey. You’ll then need to drain it or add more flour, which can negatively affect the flavor. Very dry cottage cheese can also be difficult to blend.

Step 2: Mix the batter

Add the flour to the cottage cheese mixture and mix again. The batter should be soft and tender, but not overly sticky.

Attention! If the cottage cheese is very moist, you can add another half tablespoon of flour. Ideally, let the cheese drain in cheesecloth beforehand to remove excess whey.

Step 3: Shape and coat

Form the batter into small balls, then gently flatten them into round patties. Lightly coat each syrnik in flour — this helps create a golden crust and keeps them from falling apart while frying.

Attention! If the batter holds its shape well, you can roll it into a thick log and slice it into rounds.

Step 4: Frying

Heat a pan with oil. Fry the syrniki over medium heat for 2–3 minutes on each side. Once a golden crust forms, they’re ready.

What to serve with classic syrniki

Classic syrniki taste best when served hot. Popular toppings include:

  • thick cold sour cream;
  • natural honey or maple syrup;
  • homemade jam or preserves;
  • fresh berries (blueberries, raspberries) and powdered sugar.

The main ingredient of this dish is cottage cheese, which can be low-fat. In that case, classic syrniki can easily become a lighter option. Whether you serve them with jam or low-fat yogurt is entirely up to you.
